Homemade Fruit Leather

This weekend Safeway was having a sale and there were two pounds of strawberries for five dollars.  Granted not the best deal but I had seen a recipe on Pinterest that I was interested in trying.  So today was the day I was going to try the homemade fruit leather recipe.  I started at eight this morning.  Cut up the two pounds of strawberries, got them in a pot with 1/4 cup of water, 1 tbs of sugar and 2 tsp of fresh squeezed lemon juice.  I let them simmer for about thirty minutes and then cool slightly.  Blended the strawberries until pureed.  Got my cookie sheet ready with plastic wrap and oil and then poured the puree down.  My oven was set to it’s lowest temperature of 170 degrees and I set the tray in there for seven hours.  I rotated the tray three times and left the oven door open for about two hours of the whole cooking process.
For the first time making it I learned…
Make more… I don’t think two pounds of strawberries was enough.  I think I either make more strawberries or use a half sheet rather than a cookie sheet.
I am thinking maybe a little less cooking time.
Overall, I think I will make it again.  I may try some other fruits.  I will wait until the fruits are cheaper.  At this time of year I don’t think there is a cost saver in making my own fruit leather versus buying it… essentially I spent six dollars to make a cookie sheet’s worth of fruit leather.
