Kitchen Play

Yesterday I woke up and got the kitchen play bug.  I headed straight to the kitchen where I made two dozen banana muffins, one loaf of banana bread, two different batches of homemade fruit snacks, three dozen oatmeal chocolate chip cookies and white chili.  We had our friend coming over and I wanted to make sure I had some goodies for her to take with her.  I think I did just that.  By two in the afternoon I had finally finished everything and had my kitchen cleaned up from the huge mess that I made, because while I was making all of that the hubby also decided that he wanted to make biscuits and gravy… so in my very small kitchen there were two people and a lot of dishes, things boiling, things baking and it was CRAZY!
For the muffins and loaf of banana bread I use this recipe Janet’s Banana Bread.  I do not put nuts in mine but will often add two cups of chocolate chips.  There have been times that I am out of sour cream and so have used a cup of Yoplait yogurt and that is good too.  One time I even used blue berry yogurt and then added two cups of fresh blue berries.  Oh that was tasty!
For the fruit snacks I tried two different recipes… the same ingredients but different portions of them.  The first and smaller batch I made was a little too small of a batch and I feel like the lemon juice was a little overpowering plus the gelatin although I was a whisking fool did not totally incorporate so there are little gelatin flakes.  The second batch was a larger batch and I think it will be my preferred method.  The lemon to fruit ratio was a little better, although you can taste the zip of lemon it is not overpowering.  Since this past Friday Five Deal at Safeway was two pounds of blue berries I think I will try and use this recipe and make blue berry fruit snacks.  I actually just used my left over strawberries from the fruit leather recipe I tried last week.
For the oatmeal chocolate chip cookies I tried a new recipe that I found on Pinterest.  The cookies were okay!  I usually prefer a softer cookie and these came out of the oven a little more on the crisp side for my liking.
For the white chili, I have a recipe that I friend gave to me and I use it as a guideline and since it really is a family favorite I have tweaked it to be something that we like.  This chili is not a healthy one but it is a warm hearty cold winter day hug!
