I found a recipe a few months ago for a very simple pumpkin bread/muffin recipe and I have used it multiple times. With all our pumpkins that we grew in our garden I made a bunch of puree pouches, I simply made puree and then put them into quart zip locks and froze them flat. This morning I made some pumpkin muffins, I used a Betty Crocker French vanilla cake box mix and two cups of pumpkin puree and mixed it up. This morning I added butterscotch chips to the mix too. It was okay but I think my favorite is when I use the spice cake mix and pumpkin puree. It is a simple recipe and impressed some guests last week when I made it.
