Last summer we were over at a friend’s house and she got out of her freezer some mini pancakes that she had bought at the store and my boys thought that was just about the coolest thing since, well, sliced bread. Since then I have made some of my own. This weekend I made the boys pancakes and I made more batter than I knew they would consume in that morning and decided I would make them a freezer bag full of mini pancakes. All I do is instead of the 1/4 cup pancakes that I make I just use my tablespoon and whal-la mini pancakes. The boys eat them up!
